Magic Berry Muffins

1&1/2 cups flour (nice with whole wheat)
3/4 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1&1/2 tsp sugar
1/2 tsp cinnamon
1/4 cup milk
1 large egg
1/4 cup vegetable oil
1 Tbsp lemon (or lime) juice
1 cup blueberries or mixed berries- any berries, frozen or otherwise
Preheat oven to 375 degrees (180 C).
Mix flour, baking powder, baking soda, salt and 3/4 cup sugar in medium bowl, set aside.
In a small cup, mix the 1&1/2 tsp sugar and cinnamon. Set aside.
In another bowl, whisk egg, milk, oil and lemon (or lime) juice until smooth. Using a spatula, combine with flour mixture. Mix thoroughly. It will form a very stiff, crumbly batter. Don’t over do it! Add the berries. Again don’t over do the mixing. You want it just combined.
Place dough in muffin pants, in muffin tin, each about 2/3 full. Sprinkle the tops with sugar/cinnamon.
Bake about 20 minutes or until muffins are a little puffed and golden brown.
Cool slightly and enjoy while warm. They are also yummy next day stored at room temperature!
